The funny thing about coconut milk from the can is that you have to cook it for a long as time until it cooks down to the creamy consistency you want. FILIPINO TRUFAX, YO.

I've found that toasting curry powder in a little bit of oil really brings the flavors out. Also, the top secret ingredient I throw in is a little bit of fish sauce or shrimp paste for the umami flavor. I don't tell Eric because it blows his mind. Soy sauce works too.
